After trying this at the only Thai restaurant in Manhattan that makes it, I never ordered the ubiquitous iced tea from them again. Actually, I never ordered anything else from them again. I don’t know how they make it and I’ve never actually looked up the recipe, but, my version tastes almost like the real thing (I’m sure they use Thai basil, and not the common basil variety most of us are used to). I blend this in my Vitamix, but I’m sure this can also be steeped or brewed in the sun.
There’s a secret in this smoothie and you’ll never taste it!
3 ripe peaches, seeded, skin on
1/2 cup shredded yellow cabbage
1 cup cream of coconut
1 cup blueberries
1 cup Fuji apple juice or apple juice of your choice (juice your own or look for Red Jacket Orchards brand if you’re in NY)
Blend well until smooth, adding more juice if needed.

1 cup frozen or lightly steamed spinach, cooled
1/2 cup blueberries
1 banana, frozen, if possible
1 cup yogurt or kefir of your choice
Blend all ingredients until smooth, adding more yogurt, kefir, or water if you want a thinner consistency.
1 carrot, scrubbed, cut in half
pinch of salt, optional
Add carrot, about a half cup of water, and salt if using to Vitamix and blend until smooth.
