Ten years ago, no one knew what the heck health coaching was. To many, it sounded like a gimmick - pay someone to tell you to eat kale and make time for yourself? Isn’t that what registered dietitians and psychologists are for?
Breakfast bars for a lazy weekend morning or made the night before for breakfast on the go.
1 ripe banana
2 large eggs
2⁄3 c pecans
1⁄3 c low-fat plain yogurt
This is one of my favorite bean dip recipes and I spread it on warm crusty bread or pita with olive tapenade or za'atar.
¾ cup dried white beans soaked overnight (becomes about 2 cups) OR one 15 oz can of white beans, drained
1⁄4 c powdered buttermilk
1 tsp chili powder
1 tbsp lime zest
2 tbsp butter, melted
9 c popped popcorn
1 head cauliflower
1 onion, sliced into ¼" rings
2 tbsp olive oil
11⁄2 tsp curry powder
1 tsp kosher salt
3 c water
2 tsp Herbed Vegetable Broth Powder or bouillon
If you don't have a fondue pot, a mini slow cooker will do just fine.
Serve this with sliced, tart apples and your favorite veggies, raw or lightly blanched.
Two of the biggest challenges I hear from clients and just about everyone is that eating good food (healthy, whole, unprocessed, organic, sustainable, ethical) is too expensive and time consuming. Maybe it’s time we start challenging these notions.
